Traditional Arab bread making

I was in a short visit to my mom's house . I followed her to the out door to her traditional stove , where she makes her yummy and tasty loaves of bread . She put the dough over a hot flat stone , then she covers it with a round metal shield . After that she put the burning coal over it and wait for half an hour for it to get ready :) .   • At first glance it may seem unhygienic but guess this is the old traditional way of baking bread. I can imagine how tasty it could be. Once I tasted kind of bread and it was really superb!

       My mom don't but artificial  yeast  in dough  , people here don't like it because  , it spoils  the taste  . The dough get fermented by its self  , and this is because they prepare  it in the early morning  if they want to have it for dinner   . They knead  it many times  and it get fermented by itself  . Unfortunately I have missed taking the final shot of it   , I might do it some day :) 

  • That's great Rose...!!  Do  you know if your mother make the dough ferment with yeast?  It's good to see there're already bread cooked in such ovens. Good habits were lost here :/
