Lamb Fried Rice (Indonesian Dishes)

Hi all,This is my first posting in this forum. Today I would like to share one of my favourite dishes, Lamb Fried Rice (Indonesian Style).I believe it's not difficult to make the fried rice. However, finding the ingredients in your local market probably is the most difficult part. Hope you all can enjoy it.Lamb Fried Rice (2-3 servings):2-3 serving of steamed rice (do not use too much water while steaming the rice as it will soften it. For frying purpose, you want to get a little bit hard of steamed rice)200 gr Lamb Meat60 gr Shallot30 gr Garlichalf of teaspoon of Salt (adjust it to your style)1-2 pc(s) Egg(s)a Pinch of Ground Nutmega Pinch of Ground Pepper1-2 tablespoon of Sweet soy sauce (Kecap Manis)Chilli (adjust to your style)1-2 pc(s) ScallionsShortcut Directions:- Drown the lamb into water and boil over low heat approx. 30 minutes until tender. Thin-sliced the lamb.- Now, prepare the seasoning. Grind the shallot, garlic and chilli. Sauteed the ground seasoning over low heat, add the sliced-lamb and stir well for a while.- Add the steamed rice, sweet-soy-sauce, ground nutmeg, ground pepper, salt and egg while stirring well. Wait until it heated through. Then serve warm.     Regarding your questions:
    - Yes sure. When I wrote Eggs, that refers to raw eggs. Please note that when you mix the eggs while frying the rice, please keep stirring. Just like when you make a scramble eggs.
    - For sweet soy sauce, I personally prefer the 'real' sweet soy sauce (I usually use 'Kecap Manis Bango' in Indonesia), though logically it has the same main ingredients. However the sweet soy sauce has a 'secret' ingredient to make it more tasty and has a unique taste. As far as I know, sweet soy sauce doesn't have flavor.

    For substitution, it can be done like your way. I'm sure the taste will not differ too much as the amount of this sweet soy sauce is only little and just for enriching the taste of the fried rice.
