NIHARI

 

INGREDIENTS REQUIRED

 

Beef 1 Kg (preferably shank cuts)(We call it bong)

Bones (knuckle & marro) 2 kgs.

Onion 1 medium finely sliced

Flour 100 gms (dissolve in 2 cups water)

Cooking oil 175 ml

Spice:

Prepared pack available in market of different brand generally containing:

Red chili

Salt

Paprika,

Nigella Seed,

Garlic

Dehydrated onion

Cumin

Bay leaf

Aniseed

Green Cardamom

Black pepper

Ginger

Clove

Fennel

Total weight of all above spices not over 60 gms

 

Step of cooking

  1. 1.          Heat half cup of oil, add meat with above mentioned spices.  Stir fry until oil separates from masala (spices).
  2. 2.          Add 3 liter water and bones.  Stir and bring to boil.  Cover the cooking pot undisturbed on low heat for 3-4 hours till the beef soften.
  3. 3.          Gradually add dissolved flour in the gravy. Stir and mix.  Bring to boil and cook for 15 minutes.  Stir occasionally.
  4. 4.          Heat separately sliced onion. Stir fry until golden and pour into Nihari.  Cover and simmer for 10 minutes on low heat.
  5. 5.          Remove bones of big sizes and leave small one in Nihari.  Collect marro from the big bones and mix it in gravy. Stir slowly.
  6. 6.          Remove excessive oil before serving.
  7. 7.          Serving Suggestions: Garnish with sliced green chillies, fresh ginger (sliced) and lime. Serve hot with tandoori naan.

    It sounds so spicy or hot. I'm afaid it may be too spicy for me, but it may be the favorite dish for those who enjoy spicy food. 

  • Most of the time Bones are separated before serving.

    Don't feel strange.  These are very useful for those are suffering from arthritis (joint pain).

    If nehari is made without bones it is cooked not of that taste as it is with bones.

    Presently we are in USA. We went to the mall to buy beef for Nehari.  The vender gave the beef without bones.  My wife insisted to provide bones separately.  We paid for the bones separately.
