The rice is good too

Kubsa is sheep boiled with rice. Some tomato and cucumber salad sprinkled on and eaten by hand (hands washed well beforehand as the tradition is here)

  • Why worry about a fork when your right hand is clean? See how easy it is to form a ball of the rice to pop into your mouth.  Of course, the right hand is the only hand allowed to touch the food in Islamic cultures.

Spoons and forks can also be used, but this informal event is a good way to keep in practice with the traditional ways of eating such foods. Thank you for your comment Sara. I have a few moments of internet between classes tonight so I am trying to see everyone's comments before I must go.  :)

It is amazing how much we depend on the internet, especially in communicating with our friends. Our house is brand new and there is no phone service except for mobile service so far. When the phone lines make it there we can get high speed internet.

The recruiter in the USA who helped us with this job promised us that we had internet, but people do not always check what they say for the truth and so here we are! He also sent us a wotk schedule of 8:00AM to 12:00PM and then 4:00PM to 8:00 PM to finish the day.  Now that we are here we see the classes begin at 7:30 AM and the night classes begin at 8:00 PM and go until 10:00PM.  Maybe he was too eager to be paid for recruiting us by the Institute to check the facts, or maybe he even knew there was no internet.  Either way, I am greatly handicapped by this and miss all of you very much.

  • Sitting on carpets spread out under a shade tree beside a dry wadi. A good way to spend the evening even if some of the food is not your normal fare. The sheep head has meat under that skin and more to eat inside including the tongue. The brown square in the foreground is liver which is eaten first and then is supposed to keep the other meat from sticking between your teeth. I think it worked.
