Marinated Turkey Breast with Potatoes

Chef: Stella Volpe, registered dietitian and associate professor at the University of Pennsylvania School of NursingTurkey breast is a low-fat protein that can be dressed up with a marinade then baked or grilled. Volpe prefers using low-salt soy and chopped garlic, but you can add more flavor with a little bit of honey and balsamic vinegar. For a side dish, try cubing potatoes with the nutrient-rich skin still in tact and baking them in the oven with olive oil, Italian dry seasoning and chopped garlic and peppers. Round out the meal with crispy kale: Drizzle the leaves with olive oil and bake them in the oven.
