As the topic is about ONE SPECIAL DAY I would love to share one of my lovely day ever, I had with my friends.
My friends were deciding to have a party before vacations and they have decided the day but suddenly I got a problem in attending the party and I excused them that I wont be able to come on the decided day they all yelled at me at first and then started to force me to come on the same day.But I was unable as I had to go with my family to the airport to see off my aunt and uncle.As it was a genuine reason of not attending the party so my friends delayed the party and convinced other mates too to arrange the party after few days.They all wanted me to attend that party and some of them got upset and yelled at me and told me,"we are not going to do that party without you" that moment for me was amazing,lovely and just priceless.It was that moment for me when I realized how important I am for them.
That was ONE OF MY SPECIAL DAY. I really felt blessed for having such caring and loving friends in my life.

One Special Day is correct, but there is a tricky thing about the second time you mentioned it. You might want to correct "ONE OF MY SPECIAL DAY" to say DAYS (plural). Because "One of" means there are more than one days (one of a few or maybe one of many). It is like saying one of my friends, because you have many friends.
