Arabian cuisine

  • INGREDIENTS       

                                                MANDI OR SPICY RICE

FRIED CHICKEN

-1whole chicken.                        -21/2 cups of rice

-cooking oil                                -2 cups of water

-1teaspoon curry                         -1teaspoon each of finely grinded

-1/2teaspoon of grinded ginger    cumin,cinnamon,candomon&blakpepper

-1teaspoon of salt                                                                                                                     

-1 maggi cube                              -1/2teaspoon of finely grinded ginger

-1 medium size onion                   -1 medium onion&garlic                         

                                                    -1teaspoon of salt,1maggi     -

                                                    - 4pieces of cloves,food coloring.

 

 

PROCEDURE

Cut the chicken into 4 parts wash properly,put in a pot and add 2cups of water,1 teaspoon of salt ,ginger,maggi curry,sliced onions and cook until tender.

Remove the chicken pieces from the stock and fry it in an already heated cooking oil until brown.keep the stock (chicken water) aside for later use

 

In another pot pour 1/3 cup of cooking oil,add the sliced onion and fry until golden brown.then add the following,1teaspoon fo cumin, cinnamon,candomon,blackpepper,ginger,grinded garlic and maggi fry for 2-3mins then add the washed rice and continue stirring for 2mins,add the chicken stock,followed by the water,then add the salt and stir properly,leave it to cook for some time.,When the rice is cooked that is, soft and no water left ,lower the heat and add the 4 pieces of cloves, mix 1/2teaspoon of red powdered food color with 11/2tbs of water and pour the mixture round on top of the rice.cover the pot and leave to simmr for 5mins.After that use the cooking spoon and mix the rice together so the color can go round.not allpartb of the rice will be colored it will have 2colors,yes thats the idea.

 

Now you can serve in an oval plate put the chicken on both sides of the plate.

You can serve and eat it with lettuce salad,and yougurt with co cumber in it. (slice the cocumber put it in the yougurt add smal salt,black pepper,small cumin,and candomon stir the mixture very well and serve in small bowls.

The aroma already getting to you ,why dont you try it .BON APPETITE
